How To Cook Prime Rib


In this recipe straight from the Certified Angus Beef test kitchen, you’ll learn an easy, no fuss method for cooking for Christmas prime rib.

Step two, gather your ingredients. You will need your rib, kosher salt, and pepper (fresh cracked is best). Don’t throw away your paper wrapping just yet! Be sure to take note of the weight of your prime rib to get an accurate cook time.

A key to cooking any cut of beef is to bring the beef to room temperature before you cook. Take your prime rib out about an hour before cooking.


Then, follow these step by step instructions:


  1. Preheat oven to 450°F. Season roast evenly with salt and pepper. Place roast bone-side down in pan.

  2. Place beef in oven and roast 15 minutes. Reduce heat to 325°F and continue roasting for about 20 minutes per pound for medium (when thermometer registers 135-140°F).

  3. Transfer roast to cutting board; loosely tent with foil and let rest 15 minutes. Slice roast across the grain.
